Dinner Inspiration: Garden Chowder

Although it is March, it can still be chilly outside. This soup recipe is one that my entire family enjoys. I first tasted Garden Chowder at a restaurant called Zupas.  I loved it and immediately went home and tried to find the recipe.  

Garden Chowder

2 Medium Zucchini, diced
1 Medium Onion, diced
2 T Fresh Parsley, Minced (or 1 T dry Parsley)
1 t dried basil
1/3 c butter
1/3 c flour
1 t salt
1/4 tsp pepper
3c chicken broth
1 t lemon juice
2-3 Roma tomatoes, diced
1 12oz can evaporated milk
1 1/2 cups of frozen corn
1/3 c Parmesan cheese, grated
2c cheddar cheese, grated


Melt the butter in a large pan on medium heat. Add the onion, zucchini, parsley and basil.  Saute until vegetables are tender. Stir in flour, salt and pepper. Gradually stir in chicken broth. Add lemon juice; mix well. Bring to a boil; cook and stir for two minutes. Add tomatoes, milk and corn; bring to a boil. Reduce heat; cover and simmer for five minutes or until corn is tender. Just before serving, stir in cheese just until melted. Enjoy!

I made a few minute changes but the recipe is basically the same as the original found at Little Robin's Cooking Adventure's.

Mels Kitchen Cafe has a recipe that is almost identical with a few variations to make it lower in fat.
